GEOGRAPHIC INDICATION Eden Valley
METHOD This single vineyard Cabernet Sauvignon comes from Millon's Eden Valley estate in the rolling hills of Pewsey Vale with an elevation of 550 metres. All fruits were destemmed, not crushed and tipped into open top fermenters. The fruits were then held at 10 - 15 degree Celsius for 3 days before allowing to warm and start fermentation. After 10 days on skins and pumped over twice daily, the wines were pressed into 20% new, 80% seasoned French oak hogsheads, where they matured for 15 months.
APPEARANCE Deep purple in colour.
NOSE Exhibits complex aromas of violets, black currants, and plums.
BODY Medium <> Full
PALATE Pronounced black cherries, mulberries, and a hint of star anise. A complex wine that is well rounded and finishes with silky, lingering tannins.
HOLISM Vegan friendly.
