GEOGRAPHIC INDICATION Eden Valley
METHOD This wine come from Millon's Eden Valley Vineyard, Pewsey vale with an elevation of 550 metres above sea level. It is ideal for elegant and varietal styles of Cabernet Sauvignon. All fruit was destemmed and crushed into open top fermenters. The fruit was then held at 10-15 degrees for 3 days before allowing to warm and start fermentation. After 10 days on skins and pumped over twice daily the wines were pressed to 20% New 80% seasoned French oak for 15 months then bottled. No fining or filtration was used on this wine.
APPEARANCE Deep red colour with some purple hues.
NOSE A varietal complex nose of violets, dried herbs and blackcurrant.
BODY Medium <> Full
PALATE Pronounced black cherries, star anise and mulberries. A complex wine with silky tannins and a lingering finish.
HOLISM Vegan friendly.
