| METHOD | This Single Vineyard Grenache was destemmed into open-top fermenters, leaving 10% whole bunch clusters. The fruit was then fermented at a low temperate to retain freshness. After 12 days on skins and gently plunged daily, the wine was pressed to seasoned French oak Puncheons where it matured for 12 months. No fining was used on this wine. |
