METHOD | This small parcel of Single Vineyard Clare Valley Rose was pressed directly off skins within 2 hours of harvesting to achieve our desired colour. It was then cold settled for 48 hours. Fermenting at cool temperatures with a small amount of solids allowed us to create this textural perfumed wine. The wine was fermented dry, filtered and bottled. |
